Canapés to Save the Day!

This easy and delicious recipe can be adapted into many different flavor profiles and ingredients, but a classic tuna avocado canapé is what kicked off our love of big meals made of small bites! Pair with most sauvignon blancs (or any dry white wine).

You’ll need:

  • Whole wheat sourdough bread - cut slices into a rough, round shape to keep an authentic, but not too perfect look. Make sure the rounds are sized so that they’re easily held between your thumb and forefinger. Very lightly toast them so that they don’t get gooey. Too much toast and they get really hard and unpleasant to bite into, so don’t go overboard.

  • Guacamole - if possible, make it fresh. Add a spoonful atop one of your newly toasted and cooled sour dough bread disks.

  • Sushi grade tuna (optional!) - cut the tuna into smaller chunks and carefully place the chunks on top of the guacamole, taking care to cover a good bit of the surface area to protect the guac from oxidizing and turning brown.

  • Spritz with a slice of lemon and sprinkle with salt. Don’t hesitate to try different flavored salts. Top with dill sprigs.

Things are about to get good, because whether these are just for you, or if you’re sharing with friends, it’s time to eat. None of these bites are built to last, which is why they pair so well with a bright, fresh white wine.
